Guarantee of quality
The three DOC Lambrusco wines of the province of Modena are
controlled by the Consortium for the Historic Mark of Modenese
Lambrusco, whose emblem is the rose-window of Modena's cathedral,
chosen as a symbol of the product's authenticity. The Consortium's
producers account for about 85% of the entire output of
DOC Lambrusco in the province of Modena. To guarantee
its quality, each year the Consortium for the Historic Mark
of Modenese Lambrusco checks 15 million bottles of DOC Lambrusco
wines, which undergo severe tests. A special technical committee
performs organoleptic tests on anonymous samples drawn from
producers, subsequent to their having undergone a range of
chemical analyses. The evaluation is carried out using a points
system which indicates whether or not the wine is of a standard
to bear the Consortium's label or mark of approval. As well
as overseeing quality control, the Consortium for the Historic
Mark of Modenese Lambrusco also supervises the promotion of
the product.
